does lie angle matter less as the club length gets longer? I should hit a 2 or 2.5 degree flat, per what I get hitting balls on a lie board. Until I get such clubs, is the mismatch more of a problem on a 9 iron than on a 3 iron?

I think you need to go see a fitter. My previous set of irons (AP2) were set at 2* up and I was hooking the ball severely. When I was fitted for the 716 AP1s, it was found that I was fitted incorrectly and should have been fitted at 2* flat. All of my clubs at set at 2* flat 5 iron thru my wedges. Now I am hitting the ball on target as long as I am lined up properly. Fittings work.

This Game is enough though why do not playing with the correct tools. But to answer to your question, my experience showed me that more loft clubs are more affected with direction when playing wrong lies.
Just imagine an arrow passing trought the middle of the head of wedge, now put the club more upright or more flat and look the direction of the arrow.
