I have been thinking about getting the 56 in the S grind because I usually hit these shots square, and then the 60 in the M grind because I usually hit it with the club face open.  I think this seems like the right approach?  What do you guys think?

Absolutely! Nothing wrong with playing different grinds. All my wedges have different grinds. Whatever you need for your game and shot selection.

All of my wedges have different grinds because the serve different purposes. My 60 has an L grind woth 4 degrees of bounce for hitting out of tight lies around the greens or opening the face to hit a soft landing flop shot. My 54 on the other hand has an S grind with (10?) Degrees of bounce for hitting out of bunkers .
